1/2 lb. black beans (turtle beans)
1 med. onion, chopped

Wash beans. Soak 3 hours in 2 quarts of water. Boil in same water and keep on low heat (simmer) 1 hour. Heat oil and fry slightly: garlic, green pepper and onion. Cheese Ball w/ Rasberry Recipe

1/2 lb. American cheese
1/2 lb. cheddar cheese
1 c. pecan chips
5 to 6 green onions, chopped
Mayonnaise
Raspberry preserves, about 6 oz. jar

Grate American and cheddar cheese. Mix in pecan chips, chopped green onions and enough mayonnaise to hold together mold. Refrigerate until ready to use. Then unmold on tray and cover with raspberry preserves. Serve with Ritz crackers.



Smoking Texas Caviar Recipe

1/2 onion, chopped
2 med. tomatoes, chopped, drained
1/2 c. fresh cilantro, chopped

Carrot and Cheese Balls Recipe

1 1/2 c. shredded carrots (3 to 4 lg.
carrots)
1 (8 oz.) pkg. Neufchatel cheese,
softened
2 c. (8 oz.) shredded low-fat cheddar
cheese
2 lg. cloves garlic, minced
1 tsp. Worcestershire sauce
1/2 tsp. Tabasco sauce
3 to 4 tbsp. fresh parsley, chopped

How to make Carrot and Cheese Balls
Press carrots between paper towels to remove excess moisture; set aside. Combine Neufchatel cheese and cheddar cheese in a medium bowl; stir well. Add carrots and garlic; stir well. Cover and chill 1 hour. These ingredients may also be combined in a food processor and mixed. Shape cheese mixture into a ball; roll in parsley. Wrap in wax paper and chill at least 1 hour.



Sausage Balls Recipe

1 lb. breakfast sausage
1 1/2 c. shredded cheddar cheese
1 1/2 c. Bisquick mix

Mix all ingredients together. Roll into small balls. Bake in oven for 15 minutes at 350 degrees.



Eggplant Caviar Recipe

1 lg. eggplant
1 c. finely chopped onion
1 c. finely chopped bell pepper
2 tbsp. olive oil
1 tomato, finely chopped
Salt & pepper to taste

How to cook Eggplant Caviar
To cook eggplant: Roast on BBQ grill until the skin of the eggplant is brittle, turning occasionally to insure that it cooks thoroughly. Once cooked, let it cool, then peel. Scrape all insides into a bowl and set aside. Discard the skin. (If you do not have access to a BBQ grill, you can boil the eggplant for 25 minutes.)

In a large skillet, brown the onion and green pepper in the olive oil. Add eggplant and tomato and stir often. Cook until the mixture is well done. Add more oil if it begins to stick. Salt and pepper to taste. Once the mixture is cooked, put it in a serving dish and chill. Serve as a spread for pumpernickel bread, French bread or crackers.



Tuna Devil Eggs Recipe

1 1/2 doz. eggs, hard boiled
1 can tuna
Dash of salt
Dash of pepper
3 tbsp. salad dressing
2 tsp. mustard
Chopped onion to taste

Boil eggs with a little salt. Cut eggs in half and take out the yolks. Mash yolks with a fork, adding salt, pepper, salad dressing, tuna, mustard and chopped onion. Fill egg whites with the mixture.

2 doz. lg. mushrooms
1/2 c. butter
2 cloves garlic, minced
2 shallots, minced
1/2 c. minced parsley
Juice from 1/2 lemon
1/2 tsp. salt

Clean mushrooms, removing stem. Combine butter, shallots, garlic and parsley. Process. Add lemon juice, salt and pepper. Blend briefly. Place mushrooms in a shallow baking dish. Fill each mushroom with a dollop of garlic butter mixture (about 1/2 or 1 teaspoon each). Bake at 400 degrees for 10 to 12 minutes.



Itallian Margherita Pizza Recipe

2 tsp. garlic, chopped
2 med. tomatoes, sliced
2 tbsp. olive oil
1 dash of salt
1 dash of pepper
6 oz. Mozzarella cheese, sliced
2 med. wheat flour tortillas
2 tbsp. fresh basil, minced
1/2 c. fresh Parmesan, grated

How to cook Itallian Margherita Pizza
In a small bowl place the garlic, tomatoes, olive oil, salt and pepper. Thoroughly coat the tomatoes. Place the cheese slices over the tortillas. Place the soaked tomatoes on top. Sprinkle on the basil and Parmesan. Preheat the oven to 350 degrees. Place the tortillas on a cookie sheet and bake them for 8 minutes or until the cheese is melted. Cut the pizza into wedges. Serves 2 as an appetizer or 1 as a main course.



Crab Canapes Recipe

6 English muffins, split
1 stick softened margarine
2 tbsp. mayonnaise
2 (5 oz.) jars Old English spread
1/4 tsp. garlic powder
1 (6 oz.) can crabmeat

How to cook Crab Canapes
Mix above ingredients together and spread on English muffin halves. Cut each muffin into quarters. Freeze, then package and store. TO SERVE: Remove from freezer (do not thaw) and bake at 350 degrees for 15 minutes. Serve warm.



Easy Baked Brie Recipe

1 (15 oz.) mini brie
1/2 c. chutney
1/4 c. bacon bits

How to cook Easy Baked Brie
Remove rind from top of cheese, cutting to within 1/2 inch of outside edges. Put on microwave safe dish, spread chutney on top, sprinkle with bacon. Microwave uncovered on high for 1 1/2 to 2 minutes or until brie softens to desired consistency, giving dish a half-turn after 1 minute (or bake at 325 degrees for 20 minutes). Serve with crackers or fruit.



Crab Puffs Recipe

1 can white crab meat
1 jar Old English cheese spread
1/2 tsp. mayonnaise
1 stick margarine, softened
1/2 tsp. garlic salt
1 tsp. chopped green onion
Tabasco, cayenne to taste
6 English muffins, split

How to cook Crab Puffs
Mix together all ingredients, except muffins, adding the crab meat last. Spread on the English muffin halves. Put in freezer 45 minutes. Take out and cut in 4ths. You may put these in freezer bags after cutting and pop in the oven when unexpected guests arrive. May also serve these whole with soup. Cook for 10 minutes at 450 degrees.



Spiced Fruit Cobbler Recipe

4 cans or 1 qt. fruit
1 tsp. nutmeg
1 tsp. cinnamon
2 tbsp. sugar
1 pkg. white cake mix
1 1/2 c. water
2 eggs

How to make Spiced Fruit Cobbler
Place drained fruit slices in bottom of oven. Sprinkle with spices and sugar. Blend cake mix, water and eggs. Pour over fruit mixture. Cover and cook 25-35 minutes at 350 degrees.



Stuffed Artichoke Bottoms Recipe

1 can artichoke bottoms, drained
1 bottle Wishbone Italian dressing
1 pkg. Stouffer's Spinach Souffle,
thawed
1/4 c. bread crumbs, mixed with 1/4
c. melted butter

How to cook Stuffed Artichoke Bottoms
Marinate artichokes overnight in the salad dressing. Drain. In a shallow baking dish, place artichokes side by side. Fill with the spinach and top with the bread crumbs. Bake, uncovered, at 400 degrees for 20 minutes. Serves 6 to 8.



Chicken Pecan Pate Recipe

1 c. finely chopped pecans
2 c. diced cooked chicken or turkey
8 oz. cream cheese, cut into chunks &
softened
1 clove garlic, minced
6 tbsp. mayonnaise
4 tsp. fresh dill or 2 tsp. dried
Salt

Directions for Chicken Pecan Pate Recipe
Combine chicken, cream cheese and garlic with chopped pecans in food processor or blender and blend just until smooth. Add mayonnaise, dill and salt to taste and blend again. Form into a ball and arrange on a bed of lettuce. Sprinkle with additional dill. Serve with crackers.



Melon Tray w/ Fruit Dressing Recipe

Cantaloupe, honeydew, watermelon or
other available melons. Actually any fruits will do.

1 pkg. (3 oz.) cream cheese
1/4 c. orange juice
1/4 c. lemon juice
1/4 c. crushed pineapple
1/4 c. sugar
1/4 tsp. salt
1 thin slice orange peel
1/4 c. heavy cream

Directions for Melon Tray w/ Fruit Dressing Recipe
Slice cantaloupe, honeydew and watermelon (or whatever melons are available) along with fresh berries such as strawberries, raspberries (whatever looks best). Grapes and apples also may be used. Be sure to dip any fruit that turns color in lemon or sprinkle with fruit fresh. Arrange fruit on a serving platter. Blend all dressing ingredients together and pour over fruit or use for dipping.



Fruit w/ Amaretto Cream

1 1/2 tbsp. Amaretto liqueur
2 tbsp. packed dark brown sugar
1/2 c. sour cream
2 c. fresh fruit

Directions to cooking Fruit w/ Amaretto Cream
In small mixing bowl combine Amaretto and brown sugar. Add sour cream and mix well. Prepare at least 2 hours before serving. Stir occasionally to dissolve brown sugar. Put fruit into sherbet glasses or small souffle dishes. Drizzle with sauce. Especially good with strawberries, blueberries and green grapes. Serves 4.



Tangy Buffet Meat Balls Recipe

2 lb. ground beef (half beef and half pork will also work)
2 eggs
1/2 tsp. salt
3/4 c. oatmeal, uncooked
1/3 c. chili sauce

--SAUCE:--

1 c. chili sauce
1/2 - 3/4 c. grape jelly

Directions to cooking Tangy Buffet Meat Balls
Combine meatball ingredients, mix well. Shape to form 1 inch balls, bake on a rack in a shallow baking pan at 400 degrees for 15 - 17 minutes. Combine sauce ingredients in a 4 1/2 quart dutch oven. Cook over medium heat, stirring occasionally until mixture is well blended. Add the meatballs and continue cooking 3 - 5 minutes or until heated through. Transfer to chafing dish/fondue pot to serve. Makes about 5 dozen appetizer meatballs.



Salmon Pate Recipe

1 sm. onion, minced
1 (1 lb.) can red salmon, skinned &
boned
1 (8 oz.) pkg. cream cheese (low-fat
is fine), softened
3 tbsp. lemon juice
1 tbsp. horseradish
2 tsp. dried dill
1/4 c. parsley leaves, firmly packed
(1/8 c. minced)
1/4 tsp. liquid smoke
1 tsp. Worcestershire sauce
Dash of Tabasco
Salt & pepper to taste
Optional: Scallions, sliced; black
olives, sliced; mushrooms,
sauteed, chopped

Prepare in food processor. Mince onions, add remaining ingredients and mix until smooth. Stir in scallions, black olives or mushrooms if desired. Refrigerate several hours. Serve on toast, crackers, pita bread or sliced raw vegetables. (Can be prepared with an electric mixer.)



Peppermint Desert Recipe

2 (if large) peppermint candy sticks
1 c. rich milk
1 tbsp. gelatin (Knox)
1 1/2 c. whipping cream
Crushed chocolate wafers (without
filling)

How to make Peppermint Desert
Break candy; add to milk in top of double boiler. When candy is dissolved, add gelatin, that has been dissolved in a little cold water. Chill this mixture until it starts to set. Whip the cream and fold into chilled mixture. Line glass pan with crushed cookie crumbs. Add peppermint filling and sprinkle more crumbs on top. Chill until serving time.



Quinche Triangles Recipe

1 (5 oz.) jar Old English sharp
pasteurized cheese spread
1/2 tsp. seasoned salt
1 1/2 tsp. mayonnaise
1/2 tsp. garlic powder
1 stick margarine, melted
1 can (6 1/2 or 7 oz.) tuna or
crabmeat
6 English muffins

How to cook Quinche Triangles?
Combine cheese spread, seasoned salt, garlic powder, mayonnaise, melted margarine and flaked tuna. Spread mixture onto English muffin halves. Cut each half into 4 wedges. Broil until mixture melts. Watch carefully as it burns easily. Makes 48 wedges.



Baked Stuffed Musrooms Recipe

1 lb. sm. mushrooms
4 slices bacon, cooked and diced
5 tbsp. green pepper
1/8 tsp. sugar
1 tbsp. butter
1 med. onion
1 tsp. salt
2 (3 oz.) cream cheese, room
temperature
1/2 c. buttered bread crumbs or
cracker crumbs

Directions to cooking Baked Stuffed Musrooms Recipe
Fry bacon until crisp. Remove bacon from drippings. Cook the remaining ingredients until tender (except cream cheese). Remove from heat and mix with cream cheese. Remove stems from mushrooms; chopped stems can be added to the cream cheese mixture. Stuff and mound the cream cheese mixture into each mushroom. Place in baking dish and add 1/4 cup hot water. Spread the bread or cracker crumb mixture on top and bake for 20 minutes at 375 degrees. Insert toothpicks.



Authentic Mexican Tortilla Roll Ups Recipe

8 - 12 flour tortilla
1 (8 oz.) block cream cheese
1 sm. can black olives, chopped
1 sm. can diced green chilies
Dash Tabasco sauce

Directions
Cream together cream cheese, olives, chilies, Tabasco sauce. Spread approximately 2 tablespoons onto a tortilla and roll jelly-roll fashion and roll in plastic wrap and chill. Before serving cut into 3/8 inch wide pieces and serve with salsa for dipping.



1 Egg Butter Spritz

1 c. butter, softened
2/3 c. sugar
1 lg. egg
2 tsp. vanilla, almond or lemon
flavoring
2 1/4 c. all-purpose flour
1/2 tsp. baking powder
1/8 tsp. salt

Preheat oven to 400 degrees. Combine butter, sugar, egg and flavoring; beat at medium speed until smooth and fluffy. Add flour, baking powder and salt, stirring until well combined. Dough can be divided and tinted, if desired. If dough is too soft, chill until workable. Force dough through a cookie press onto an ungreased baking sheet. Decorate with colored sugar, cinnamon candies, sprinkles or jimmies, etc. Bake near center of oven for 8 to 14 minutes until cookies are light golden around the edges. Yield: 6 dozen.



Oyster Cracker Snack Recipe

1 c. vegetable oil
1 oz. pkg. Ranch dressing mix
1 tsp. dill weed
1 tsp. lemon pepper
1/2 tsp. beau monde
1/4 tsp. cayenne pepper
16 oz. oyster crackers

Directions to cooking Oyster Cracker Snack Recipe
Mix together and bring to a boil. Pour over oyster crackers, coating each cracker. Drain on paper towel. Store in airtight container.



Italian Lover Snack Recipe

1 lg. loaf Italian bread
Parmesan cheese to taste
16 oz. can tomato sauce
Garlic powder to taste
Butter to taste

Lightly butter bread. Cut into 3-inch squares. Place on a cookie sheet and bake at 350 degrees until lightly browned. In a saucepan, heat tomato sauce and add Parmesan cheese to taste. Lightly sprinkle garlic powder on toast and dip the bread squares in the sauce.



Ham n Cheese Snack

2 pkgs. finger rolls
8 slices pkg. ham, sliced thin
Approximately 10 slices Swiss cheese

--SAUCE:--

1 stick margarine, melted
1/4 c. sugar
1 tbsp. grated onion
2 tbsp. poppy seed
2 tbsp. mustard
Salt and pepper

Mix sauce ingredients in a sauce pan and simmer about 5 minutes. Baste both sides of roll with sauce. Place ham and cheese inside rolls. Cover with foil and bake 30 minutes at 325 degrees. Serve hot. Happy eating!



Cheese Sour Creamed Potatoes

4 lg. potatoes, cooked
1 1/2 c. sharp cheese, diced
1 c. sour cream

Dice warm cooked potatoes into baking dish. Stir in diced cheese and sour cream, blend gently so the potatoes stay in chunks. Heat thoroughly in oven at 375 degrees until cheese melts and flavor blends. Serve immediately or chill leftovers. Delicious either way.



Old Fashion Hambuger Recipe

1 c. minute rice
2 lbs. ground beef
1 sm. jar or can spaghetti sauce
Mozzarella cheese
Salt and pepper
Onion (optional)

Mix together uncooked rice and ground beef. Make into patties. Place patties in 13 x 9 inch glass pan. Top with sauce and seasoning and bake 15 minutes at 400 degrees. Top with Mozzarella cheese and bake another 10 minutes or until done to your liking.



Beef Mincemeat

2 lb. lean beef, cooked tender and put
through food chopper
1/2 lb. suet, chopped fine
5 lb. tart apples, chopped
3 lb. raisins, chopped
1 tbsp. salt
2 c. brown sugar
4 c. water (boil apple peel and cores
for juice)
OR 1 qt. sweet cider
1 c. meat stock

Allow the above mixture to come to a boil, then let simmer for 1 hour, stirring occasionally. To this mixture, add: 2 1/2 pt. grape juice
1 tsp. mace
2 tsp. allspice
1/2 tsp. pepper
2 tsp. cloves
2 tsp. nutmeg
2 tsp. cinnamon
1 c. molasses
1 orange (juice and peel, chopped)
1 lemon (juice and peel, chopped)
3/4 c. vinegar

Allow this entire mixture to come to a boil and let boil 10 minutes. Pack into sterilized jars to within 1 inch of top of jar. Wipe tops, put on lids and cap, screwing band firmly tight. Process in boiling water bath for 30 minutes.



Delicious Filet Mignon Recipe

1 1/2 lbs. lean ground beef
2 c. cooked rice (day old - leftover
is better)
1 c. minced onions
1/2 tsp. garlic powder
2 tbsp. Worcestershire sauce
1 1/2 tsp. salt
1/4 tsp. pepper
8 slices bacon
1 can cream of mushroom soup
1/4 c. milk
1 tbsp. hot sauce
(Toothpicks)

Combine all ingredients except bacon, soup, and milk and mix well. Divide into 8 equal parts and shape into round patties about 3/4 inch thick. Wrap bacon around edge and serve with toothpicks. Place on ungreased cookie pan or baking dish. Bake at 450 degrees for 15 minutes or until done. Mix soup and milk in a saucepan and heat, stirring. Pour soup over meat patties and bake 10 minutes. Best served with green and yellow vegetables.



Crabmeat Pie Recipe

12 oz. cream cheese
2 tbsp. mayonnaise
1 tbsp. Worcestershire sauce
1 tbsp. lemon juice
1 sm. grated onion

Mix above together. Crabmeat, flaked
1 bottle chili sauce
Parsley
Crackers

Spread this on pizza pan like dough. Cover with 1/2 bottle chili sauce, 1 cup flaked crabmeat and sprinkle with parsley. Serve with knife and crackers.



Bean Relish

2 med. cans kidney beans
1 sm. onion, diced
1 tsp. dry mustard
1 tsp. salt
1 jar relish (sm. Cain's)
1 tsp. garlic powder
1/2 tsp. pepper

Rinse beans in colander and remove pieces of pork and let stand about 10 minutes until practically dry. Combine with remaining ingredients. Refrigerate at least 3 to 4 hours. This is the best Bean Dip I have ever tasted.



Pica de Gallo

1 lg. or 2 sm. onions
3 to 4 cloves garlic, chopped
3 med. tomatoes, chopped
4 jalapenos, chopped
2 tbsp. fresh cilantro
1 tsp. sugar
Salt to taste

Mix all ingredients together and refrigerate. Keeps for several days.



Corn Chowder

6 slices bacon, diced
1/2 c. finely chopped onion
2 c. diced raw potatoes
1 1/2 c. water
2 tsp. salt
1/8 tsp. pepper
2 c. cream style corn
2 tbsp. oleo, melted
2 tbsp. flour
3 c. milk
Parsley, shredded cheese, corn chips

Fry bacon until crisp. Remove bacon. Saute onion in 2 tablespoons bacon drippings until transparent, not brown. Cook potatoes in the water with salt, sauted onion and bacon in covered pan until tender. Add pepper and corn. Blend oleo and flour, stir in milk and cook until slightly thickened. Add to corn mixture: sprinkle parsley, shredded cheese or chips over the top. Serve immediately and piping hot. Makes 6 servings.



Cocoa Mix Recipe

1 (6 oz.) jar Pream
1 (8 qt.) box dry milk
1 1/2 c. powdered sugar
1 lb. box Quick chocolate

Mix all ingredients thoroughly in a large bowl. Store in an airtight container. Mix 1/3 cup mixture to a cup of hot water.



Broccoli Soup

8 strips bacon
1/4 c. flour
4 c. milk
20 oz. pkg. frozen mixed vegetables
10 oz. pkg. frozen broccoli, chopped
fine
Onion (chopped)
Garlic (optional)

Boil frozen mixed vegetables and broccoli (chopped fine). Set aside to drain. Fry bacon until crispy. Set aside bacon. Pour enough bacon grease in soup pan to cover bottom of pan. Simmer onions until clear. Mix 1/4 cup flour. Then add 4 cups milk. Stir well. Add vegetables and bacon. Simmer until soup is thickened. Salt and pepper to taste. This soup has better flavor when eaten the next day.



Tripple Chocolate Fudge Icing

6 tbsp. butter
6 tbsp. milk
1 1/2 c. sugar

Bring to a hard boil. Boil 30 seconds. Will be soupy. Add: 1 c. chocolate chips
1/2 tsp. vanilla

Beat for 2 minutes. Pour on cake. Let set 2 to 3 hours. Will harden.



Fudge Frosting

2 oz. unsweetened chocolate
2 c. sugar
2/3 c. milk
1/2 tsp. salt
2 tsp. vanilla
1/2 c. vegetable shortening

Place chocolate, sugar, milk, shortening and salt in a saucepan. Bring to a full rolling boil, stirring constantly and boil 2 minutes. Cool. Add vanilla, use wooden spoon and beat until thick enough to spread. If frosting becomes too thick, add a tablespoon milk.



Chuck Wagon Beans

2 or 3 lb. hamburger (or 1 qt. canned
hamburg)
3 c. finely chopped onions, less if
desired
1 c. chopped celery
2 beef bouillon cubes
2/3 c. boiling water
1 or 2 cloves garlic, minced
1 1/2 c. catsup or chili sauce
3 tbsp. prepared mustard
1/2 tsp. salt, if necessary
1/2 tsp. pepper
2 (29 oz.) cans pork and beans or 2
qt. canned navy beans

Fry hamburg, onion, and celery until meat is brown and onions and celery are tender. Dissolve bouillon cubes in boiling water. Combine all ingredients. Put in a casserole. Cover. Bake 1 hour and 15 minutes at 350 degrees, or less if done. May be uncovered the last 1/2 hour. If it gets too dry, add more water.



Breakfast Casserole

4 slices bread
1 lb. bulk sausage
1 c. grated sharp cheese
6 eggs
2 c. milk
1 tsp. salt
Dash pepper
1 tsp. dry mustard (optional)

Tear up bread and place pieces in greased 9x13 inch baking pan. Brown and drain sausage and spoon over bread. Sprinkle with grated cheese. Beat together eggs and milk and remaining ingredients. Pour over bread. Bake at 350 degrees for 30 to 40 minutes. May be made the day ahead and refrigerated.



Jelly Cookies

3/4 lb. butter
1 c. sugar
4 c. flour
3 egg yolks
1 tsp. vanilla

Cream together butter and sugar. Add to above, flour, yolks and vanilla. Roll in a ball the size of a walnut and punch down in center. Pull small dab of jelly in center. Bake in 425 degree oven from 10 to 12 minutes. Yield: 3 dozen cookies.



Strawberry Romanoff Recipe

--SAUCE:--

1 c. double-thick yogurt
1/4 c. firmly packed brown sugar
1/2 tsp. ground cinnamon
1 tsp. vanilla extract
2 tbsp. strawberry liqueur (optional)
2 pts. fresh strawberries, about 24
oz., washed, hulled and cut into
bite-size pieces

--GARNISH:--

2 tbsp. pecan pieces, lightly toasted

Serves 4. 1 cup per serving. In a small bowl, whisk sauce ingredients until fully mixed. Refrigerate for at least 1 hour to make the sauce slightly firm. Divide berries evenly in four dessert dishes. Spoon 1/4 cup sauce over each serving. Top with nuts and serve immediately.



Pineapple Casserole Recipe

2 lg. cans pineapple tidbits, drained
1 c. sugar
1/2 c. flour (sifted with sugar)
1 stick butter or margarine
1 pkg. Ritz crackers

Mix with pineapple in casserole dish. Melt butter. Mix with Ritz crackers. Spread on top of pineapple mixture and bake at 350 degrees for 30 minutes.



Clam Dip

1 (10 1/2 oz.) can minced clams
6 oz. cream cheese
2 tsp. grated onion
1/4 tsp. hot pepper sauce
1/8 tsp. Worcestershire sauce
1/4 tsp. lemon juice
1/2 tsp. clam juice (reserved juice
from canned clams)

Drain canned clams and reserve juice. Combine clams with remaining ingredients and blend thoroughly. Chill. Serve with crackers or bread rounds.
