1 c. pecans, chopped
1 c. coconut
1 German chocolate box cake mix
1 stick margarine
1 (8 oz.) pkg. cream cheese
1 box confectioners sugar

How to cook Earthquake Cake Recipe
Combine the 1 cup of pecans and 1 cup of coconut and put in the bottom of a 9 x 13 inch baking pan. Mix the German chocolate cake as directed on the box. Pour over the nuts and coconut. Over low heat, melt the margarine and cream cheese. Slowly stir in the entire box of confectioners sugar. Spoon cream cheese mixture over cake mix. Do not spread, just drop over top. Bake cake at 350 degrees for 45 minutes.

Separate eggs and reserve whites in small bowl. Beat egg yolks, add sugar gradually and beat. Add bread crumbs, nuts, farina, and baking powder one at a time, beating after each addition. Beat egg white stiff and fold into mixture. Bake at 350 degrees for 40 minutes. When cool, crumble into several pieces. Before serving, fold cake into whipped cream. Pile into mountain form and garnish with cherries. This can also be put in a child's sand pain and sprinkled with crushed Oreo cookies. Garnish with a plastic flower and use sand shovel as serving spoon.



Graham Cheese Cake Recipe

How to cook Graham Cheese Cake Recipe
1 (3 oz.) pkg. lemon Jello
1 c. boiling water
2 (3 oz.) pkgs. cream cheese
1 c. sugar
2 tsp. vanilla
1 (13 oz.) can evaporated milk,
chilled

--GRAHAM CRACKER CRUST:--

22 sqs. graham crackers, crushed
2/3 cube butter, melted
1/4 c. sugar

Mix together all crust ingredients. Dissolve Jello mixture and let Jello set slightly. Soften cheese and combine with sugar and vanilla to add to Jello mixture. Whip 1 can chilled evaporated milk, then fold in Jello and cheese mixture. Use 3/4 crust recipe for bottom of a 9 x 13 inch pan and then put Jello-cheese and milk mixture in and sprinkle remaining crumbs on top. Place in refrigerator. Will serve 15. (I put my utensils in the refrigerator awhile so the milk will whip better.)

3 (8 oz.) pkgs. cream cheese
1 tsp. vanilla
2/3 c. sugar

1 lb. Philadelphia cream cheese

Prepare graham cracker crust (20 graham crackers, 4 tablespoons sugar and 1/4 pound melted butter) and press into springform pan. Cream 1 pound of cream cheese, 2 eggs and 1 cup sugar. Pour mixture into crust and bake 30 minutes at 350 degrees. Cool 20 minutes. Make top dressing using 1 pint sour cream, 4 tablespoons sugar and 1 teaspoon vanilla. Pour mixture over cooled cake and return to oven for 5 minutes at 500 degrees. After cake cools, refrigerate several hours before serving.

In bottom of 8 x 12 inch pan, spray real good with Baker's Joy. Will not stick if you use this. Spread the coconut in pan, then pecans on coconut. Mix cake by directions on the package and spread over pecans. Mix cream cheese, oleo, and sugar; mix until smooth and creamy. Add this over cake mix as best you can, it will be stiff. Bake at 350 degrees until tests done. But do not overcook. This is rich and delicious.



Rhubard Torte Recipe

4 c. rhubarb
3/4 c. sugar
1 (3 oz.) pkg. strawberry Jello
1 yellow or white cake mix

Cut rhubarb into small pieces. Put rhubarb in bottom of pan. Evenly spread the sugar over the rhubarb. Spread Jello over the top of the sugar. Melt 1/3 cup butter, drizzle over cake mix: 1 cup water, pour over cake mix and bake for 1 hour at 350 degrees.

Combine "crumbs" (graham cracker or cookies), butter and 1/4 cup sugar. Pack into bottom of springform pan. Bake at 300 degrees for 10 minutes. Gently mix cream cheese and eggs. Beat after adding eggs individually. Slowly add 1 cup sugar and vanilla. Pour into pan. Bake 60 minutes. Allow to cool for 10 minutes. Then combine sour cream, 6 tablespoons sugar and 1 1/2 teaspoons vanilla. Top with mixture. Bake at 300 degrees for 15 minutes longer. Allow to cool slowly at room temperature and then refrigerate. 12 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar

Line muffin tin with foil cupcake liners. Place 1 vanilla wafer in each liner. Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs and mix well. Pour over wafers, filling each one almost full. Bake 25 minutes at 325 degrees. Remove from muffin pan when cool. Chill. Top with fruit, preserves, nuts or chocolate. These are quick and easy and can be cooled quickly in freezer.

Line a 9 x 13 inch pan with 1 package of crescent rolls, press to seal. Mix cream cheese, sugar, egg yolk, and vanilla until creamy. Add the chocolate chips less the reserved chips. Mince shrimp, water chestnuts and scallions. Beat egg lightly. Mix minced ingredients and egg with cornstarch, sherry, salt and pepper. Blend well. Spread shrimp mixture evenly on bread. Cut into 4 triangles. Heat oil to smoking. Place bread, shrimp side down, on a slotted spoon, then gently lower into oil. Reduce heat slightly and deep fry a few pieces at a time until bread is golden brown. Turn each piece over and fry a few seconds more. Drain on towels. Serve with Duck Sauce and hot mustard. May be frozen and reheated in toaster oven. Excellent appetizer.

1 lb. mushrooms, cleaned and stems
removed
1 can chopped clams
3/4 c. Pepperidge Farms stuffing cubes
1 garlic clove, crushed
1 tbsp. parsley
3 slices American cheese, cut into

1/2 tsp. oregano
1/4 c. oil
3 tbsp. Parmesan cheese

2 eggs, beaten

3 med. zucchini
1/2 c. wheat germ
1/2 c. finely chopped almonds
1/4 c. grated Parmesan cheese
1/2 tsp. salt
1/4 c. margarine or butter, melted

How to cook Healthy Crunchy Zucchini Sticks Recipe
Cut each zucchini lengthwise into fourths, then lengthwise into halves to form sticks. Cut each stick lengthwise into halves (each zucchini makes 16 sticks). Mix wheat germ, almonds, cheese and salt in plastic bag. Roll about 8 zucchini sticks at a time in margarine until evenly coated. Lift with fork. Shake sticks in wheat germ. Lay on an ungreased cookie sheet. Cook in 350 degree oven until crisp and tender, about 15 minutes. Preparation time: 30 minutes. Serves: 6.



Mushrooms A La Grecque Recipe

2 lbs. fresh whole mushrooms
2 c. water
1 1/2 c. dry white wine
1/2 c. olive oil
Juice of 2 lemons
2 lg. onions, sliced
2 bay leaves
1 tsp. whole peppercorns
2 unpeeled cloves garlic, washed &
crushed
4 sprigs Italian parsley
1 stalk celery, coarsely chopped
2 tsp. salt
1 tsp. oregano
1 1/2 tbsp. finely chopped fresh
parsley
1 tbsp. finely chopped fresh dill
1 tsp. crushed black pepper

How to cook Mushrooms A La Grecque Recipe
Wash mushrooms well and set aside. In a 4 quart Dutch oven combine water, wine, olive oil, lemon juice, onion, bay leaves, peppercorns, garlic, parsley sprigs, celery, salt, and oregano. Bring mixture to a boil and add mushrooms; cover and boil for 8 to 10 minutes. Remove mushrooms from broth and place in a deep bowl. Continue boiling broth 15 minutes longer, strain broth and discard vegetables. Cool. Quarter large mushrooms and add cooled broth. Sprinkle with chopped parsley, dill and crushed pepper; marinate in refrigerator for several hours before serving. Makes 4 servings. HINT: Be sure to dry mushrooms thoroughly after washing. The caps tend to be more tender than the stems. If you wish to use only the caps, turn each mushroom on its side and cut the stem so some remains in the cap - this way the cap will hold its shape. Use the stems in a sauce or casserole.

1/3 c. red wine vinegar
1/3 c. salad oil
1 sm. onion, thinly sliced &
separated in rings
1 tsp. salt
2 tsp. dried parsley flakes
1 tsp. prepared mustard
1 tbsp. brown sugar

2 (6 oz.) cans mushroom crowns, drained

2 c. powdered sugar, without lump

Put the cream cheese in a bowl and let it soften at room temperature for half an hour. Stir in the milk a little at a time. Gradually add just enough powdered sugar to make a firm dough. Add the vanilla. Mix the batch thoroughly and knead it with your hands. Slit prune-date lengthwise and stuff with mixture.



Caviar With Shallots & Olive Oil Recipe

1/4 c. olive oil
4 med. shallots, chopped fine
1/4 c. American golden caviar

Cook livers, covered in small amount of butter, stirring occasionally until no longer pink. Put livers through meat grinder, blend with remaining ingredients. Place in 2 cup mold. Chill several hours. Garnish with chopped chives or hard-cooked eggs. Serve with crackers.



Olive Cheese Balls Recipe

1 pkg. (8 oz.) cream cheese, softened
1/3 c. chopped stuffed green olives
1/4 c. chopped black olives
1 tbsp. instant minced onions
1/4 tsp. Tabasco sauce
3/4 to 1 c. chopped fresh parsley

In medium mixing bowl, combine softened cream cheese with both types of olives, onions and Tabasco sauce; mix thoroughly. Combine cheese, mayonnaise, sherry flavoring, Worcestershire sauce, and spices. Blend until smooth. Cover and chill until firm. Shape cheese mixture in a ball. Roll ball in chopped nuts. Cover and chill. Makes a 5 inch ball. At holidays, I add a few green olives with pimentos for color.



Confetti Vegetable Pizza Recipe

2 (8 oz.) pkgs. Pillsbury crescent
rolls
12 oz. cream cheese
3/4 c. mayonnaise
1 pkg. Ranch dressing
4 oz. mushrooms, diced
3 med. carrots, diced
5 to 7 med. broccoli florets, chopped
5 to 7 med. cauliflower florets,
chopped

How to cook Confetti Vegetable Pizza Recipe
Pat crescent roll dough into a 17 x 11 1/2 x 1 inch jelly roll pan. Bake until golden brown. Cool. In a separate bowl mix cream cheese, mayonnaise and Ranch dressing until creamy. Spread over cooled crescent and sprinkle with chopped vegetables. Pat into cream cheese. Cut into squares. Prepare 8 hours prior to serving for seasoning to bloom in the cream cheese. Preparation time: 30 minutes. Serves 8 to 12.



Scallop Appetizers Recipe

1 lb. scallops
1 c. French dressing
1/2 clove garlic, crushed

Cut the scallops in small pieces, about in fourths, unless they are tiny bay scallops which may be left whole. Simmer 4 to 5 minutes in a little salted water. Drain and place them while hot in a jar with the French dressing and garlic. Marinate and chill for several hours. Drain and serve with toothpicks as an unusual appetizer. 8 servings.



Ricotta Balls Recipe

2 tsp. vanilla
2 lbs. ricotta cheese
6 eggs
6 tbsp. sugar
8 tsp. baking powder
2 c. sifted flour

Salmon Balls Recipe

8 oz. cream cheese, softened
1 tbsp. lemon juice
1 tsp. prepared horseradish

Chopped parsley
Chopped pecans

Mix together salmon with cream cheese, lemon juice, horseradish, and onion. Refrigerate until firm. Mix parsley and pecans together. Form salmon mixture into ball and roll in pecan-parsley mixture. Serve with crackers.



Spinach Squares Recipe

4 tbsp. butter
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
1 tsp. baking powder
1 lb. grated cheddar
20 oz. cooked spinach
1 tbsp. chopped onion
Seasoned salt (opt.)

Preheat oven to 350 degrees. Melt butter in 9 x 13 inch baking dish in oven. Remove dish. Beat eggs well, then add flour, milk, salt and baking powder. Mix well. Add cheese, spinach, onion and mix well. Spoon into dish and level off. Sprinkle with seasoned salt if desired. Bake 35 minutes at 350 degrees. Cool and cut into squares.



Cheese Fondue

2 c. gruyere cheese
2 c. Swiss cheese (not processed)
3 tbsp. Kirsch or cooking sherry
1 tbsp. lemon juice
1 c. white wine
1 clove garlic
1 tbsp. cornstarch
White pepper
Salt

Grate cheeses and toss with cornstarch, reserve. Rub inside of fondue dish with garlic. Add wine. Do not bring to boil. Heat until tiny bubbles form in fondue dish. Add grated cheeses and lemon juice. Stir until smooth. Remove from heat. Add kirsch or cooking sherry, white pepper and salt to taste. Serve with cubed crusty French bread.



Sweet & Sour Cocktail Meatballs

How to cook Sweet & Sour Cocktail Meatballs
Roll hamburger into 1/4 to 1/2 inch balls, bite-size. Brown meatballs in a deep frying pan using butter and a tablespoon of flour. Add: 1 c. Welch's grape jelly
1 bottle of Heinz ketchup

Simmer for 1/2 hour or until meatballs are thoroughly cooked. Place meatballs and sauce in a chafing dish with toothpicks.



Cheese Puffs Recipe

1 pkg. refrigerated rolls
1/4 stick margarine
3 1/2 oz. pkg. Bleu cheese

Cut each roll in 4 quarts. Place on a round baking pan. Crumble cheese into melted margarine and pour over rolls. Bake until golden brown. Makes 40.



Miniature Quinches Recipe

1/2 c. red or green bell pepper,
chopped
1/4 c. scallions, chopped
2 eggs, beaten
2 egg whites, beaten
1 tsp. chili powder
1/2 tsp. ground cumin
1/8 tsp. ground red pepper
1/2 c. cheddar cheese, shredded

Oven at 425 degrees. Saute bell pepper and scallions until tender in skillet (preheated to hot). Beat ALL eggs slightly. Stir in sauteed veggies with eggs and then all remaining ingredients. Spoon 1 tablespoon of mix into muffin tins (small ones = 1 3/4 x 1 inch cups). Bake until centers are set - about 8 to 10 minutes. Allow to cool a minute and then remove from tin. (They may need a bit of persuasion with a knife around the edges.) Serve hot or warm. Makes around 20 little quiches (a bite full).

Beat for 5 minutes. Store airtight in the refrigerator. Keeps for months. If you want chocolate (or brown) frosting, add cocoa to taste.



Rhubarb Dessert Recipe

4 c. rhubarb
1 c. sugar
1 (3 oz.) box strawberry Jello
1 c. water
1 yellow or white cake mix

How to make Rhubarb Dessert
Put 4 cups rhubarb on the bottom of a 9 x 13 inch dish. Sprinkle with 1 cup sugar. Next, sprinkle with 1 box strawberry Jello. On the top, sprinkle 1 yellow or white cake mix. Over this pour 1 cup of water. Bake 45 minutes at 350 degrees. Delicious served with whipped cream or ice cream.



Pate Recipe Appetizers

2 cans consomme'
2 envelopes gelatin
1 lb. liverwurst
8 oz. cream cheese
1 tbsp. grated onion
4 drops Worcestershire
2 dashes garlic salt
Sliced green olives

Dissolve gelatin in consomme and heat. Spray a chilled mold with Pam and arrange olive slices on the bottom and secure with cooled consomme; chill. Mix remaining ingredients with consomme in a blender or processor until smooth. Pour into mold. Chill until firm (4 to 5 hours) and unmold approximately 15 minutes before serving on crackers or melba toast. The Pate may be kept, refrigerated, securely wrapped for 3 weeks. Serves 20 or more. The easy way to a gourmet appetizer.



Tiny Meat Balls Recipe

--MEAT BALLS--

1 lb. chuck
1/2 c. bread crumbs
1 onion, diced
1 egg
2/3 c. half and half
All spice (to taste)

--SAUCE--

11 1/2 oz. chili sauce
1/2 c. grape jelly

Roll meat balls into small balls. Put in pan. Heat chilli sauce and grape jelly and pour over meat balls. Bake 1 to 1 1/2 hours at 300 degrees.



Teriyaki Puffs Recipe

1/2 lb. sirloin steak
1/3 c. teriyaki sauce
1 can (8 oz.) Pillsbury Crescent Rolls
1 c. water chestnuts, drained and
sliced

--TERIYAKI SAUCE--

1/4 c. soy sauce
1 tbsp. sugar
1 tsp. grated onion
1 clove garlic, crushed
1/4 tsp. ginger
1 crushed bay leaf

Slice steak into 1/4 inch strips (partially frozen meat easier to slice). Marinate meat at least 1 hour. Separate dough into 8 wedges. Cut each in half lengthwise. Place meat strip and water chestnut on each wedge of dough. Roll up and place on cookie sheet. Bake at 375 degrees for 10 to 12 minutes or until golden brown. Serve hot.



Mike Fagan's Sheeried Mushrooms Recipe

1 to 2 lbs. fresh white mushrooms
1 bottle inexpensive sherry

Lightly saute the mushrooms in several tablespoons of butter or margarine. Once sauted cover mushroom caps with wine. Lower heat and cover saucepan. As the wine reduces, add more wine. The wine/butter sauce thinkens and the mushrooms take on the sherry flavor. Served as an appetizer there may be flambee' in a chafing dish or, as I prefer, serve the mushrooms and sauce over a steak, London broil especially.



Macadamia Cheese Ball Recipe

8 oz. cream cheese
1 tbsp. A1 sauce
Macadamia nuts crushed (4 oz.)

Mix ingredients. Roll in parsley. Serve with Ritz crackers.



English Pate Recipe

1 sm. package of shelled/ deveined
shrimp (thaw)
1/2 sm. onion
8 oz. cream cheese (softened)
Juice of 1 lemon
Black pepper
1 tbsp. butter/margarine

This should be made at least one day ahead. Preparation: Beat softened cream cheese to shining. Chop onion. Method: Saute onions and shrimp in 1 tablespoon butter/margarine until onions are golden and shrimp is cooked. Fold drained shrimp and onions into the cream cheese. Add lemon juice & pepper. Chill. Serve as a dip on cocktail ryes.



Crabbies Recipe

1 can crab meat
1/4 #(lb) butter
1/2 c. margarine
1 jar Kraft Old English Cheese (or
other soft cheese spread)
English muffins

Combine ingredients and spread on English muffins. Cut into quarters. Place under broiler until heated. (May place on cookie sheet and freeze if desired. Put in to zip lock bag when frozen.)



Eggplant Fingers Recipe

2 (1 lb.) egg plants
Oil for deep fat frying
2 c. milk
2 c. flour
2 1/2 c. fresh breadcrumbs
Powdered sugar

Peel egg plants and cut into 1/2 inch strips. Heat oil to 375 degrees. Dip egg plant into milk, then flour, milk again then breadcrumbs. Deep fry, drain completely until no trace of oil appears on paper towel. Serve with powdered sugar.



Summertime Dessert Recipe

1 lb. bag Oreo cookies
1 stick melted margarine

How to make Summertime Dessert
Crush cookies and combine with margarine. Press into 9x13 inch greased pan and refrigerate. 2/3 c. semi-sweet morsels
1 stick margarine
1 1/2 c. (13 oz. can) evaporated milk
2 c. 10X sugar
1 tsp. vanilla

In a saucepan, melt the morsels and margarine. Gradually add the milk and sugar and boil for 8 minutes, stirring constantly. Remove from heat and add vanilla. Cool for about 10-15 minutes. Slice and spread 1/2 gallon ice cream over crust. Pour cooled chocolate mixture over ice cream and freeze.



Pistacio Dessert Recipe

--CRUST:--

1 c. flour
1/2 c. chopped nuts
1 tbsp. sugar
1 stick soft margarine

How to make a Pistacio Dessert
Mix together and spread in 9x12 inch pan. Bake at 350 degrees for 10 to 15 minutes. Remove and cool. --FILLING:--

8 oz. cream cheese
9 oz. Cool Whip
1 c. confectioners' sugar

Combine cheese, sugar and half the Cool Whip and spread on crust. --SECOND FILLING:--

2 (3 oz.) pkg. pistachio instant
pudding
3 c. milk

Mix together until thick and pour over cheese mixture. Top with rest of Cool Whip and sprinkle with chopped nuts.

1/2 c. soft butter
6 tbsp. granulated sugar
6 tbsp. brown sugar
1/2 tsp. vanilla
1 egg
1 c. plus 2 tbsp. flour, sifted
1/2 tsp. baking soda
1/2 tsp. salt

--TOPPING:--

1/2 c. brown sugar
1 egg
1 tsp. salt
6 oz. pkg. (1 c.) semi-chocolate chips
1/2 c. walnuts, chopped
1/2 tsp. vanilla

Combine and beat until creamy first four ingredients then beat in egg. Sift together and stir in 1 cup plus 2 tablespoons of flour, baking soda and salt. Spoon by rounded tablespoon (one to a cup) into paper lined 2 inch cupcake cups. Bake at 375 degrees for 10 to 12 minutes. Remove from oven. Top with the following mixture. Combine in bowl: 1/2 c. brown sugar, firmly packed
1 egg
1 tsp. salt

Beat until very thick. Stir in chocolate chips, chopped nuts and vanilla. Spoon 1 tablespoon over each cupcake and return to oven (375 degrees) and bake 15 minutes more. Yield 16.

2 oz. Roquefort or Blue cheese,
crumbled (I really like to use
Gorgonzola for this.)
1 tbsp. butter
1/2 tsp. dry mustard
1/8 tsp. Tobasco sauce
1/2 tsp. Worcestershire sauce
3/4 c. beer or ale
1 tsp. onion, grated
1 sm. loaf (round) or Italian bread
(if I can't find a small loaf,
I'll use a regular size cut in
half, but that does require a
double batch of the cheese
mixture.)

Beer Cheeze Recipe

2 lbs. sharp Cheddar cheese, at room
temp.
2 cloves garlic, mashed
3 tbsp. Worcestershire sauce
1 tsp. dry mustard
Tabasco to taste
1/2 bottle beer, or more as rec.
1 tsp. salt, to taste

How to cook Beer Cheeze
Cut the cheese into cubes and place them in a food processor or electric mixer. Process until perfectly smooth. Add the garlic, Worcestershire, mustard, and tabasco. Blend well. Add the beer, a little at a time, while continuing to beat the cheese, until the mixture is a good, firm spreading consistency. (Too much beer will make the cheese too fluffy.) Stir in the salt, and refrigerate. (This is a superb keeper.) Serve on small slices of rye or pumpernickle bread. Delicious with cold, cold beer. Serves 15 to 20.



Quiche Triangles Recipes

1 (5 oz.) jar Old English sharp
pasteurized cheese spread
1/2 tsp. seasoned salt
1 1/2 tsp. mayonnaise
1/2 tsp. garlic powder
1 stick margarine, melted
1 can (6 1/2 or 7 oz.) tuna or
crabmeat
6 English muffins

Combine cheese spread, seasoned salt, garlic powder, mayonnaise, melted margarine and flaked tuna. Spread mixture onto English muffin halves. Cut each half into 4 wedges. Broil until mixture melts. Watch carefully as it burns easily. Makes 48 wedges.



Brown Sugar Ice Cream Recipe

4 egg yolks
1 c. heavy cream
1 c. (packed) brown sugar
3 c. half-and-half or light cream
1 1/2 tsp. vanilla extract

In heavy, medium, nonaluminum saucepan, whisk together the egg yolks and brown sugar until thick. In another medium saucepan bring the cream and half and half just to a boil over moderate heat. Gradually whisk the hot cream into the egg yolk mixture in a thin stream. Cook over low heat stirring constantly, until the custard is thick enough to coat the back of a spoon about 6 minutes. Do Not Boil. Immediately strain the custard into a medium bowl. Stir in the vanilla and cool to room temperature, stirring occasionally, about 30 minutes. Cover and refrigerate until very cold, at least 5 hours. Pour the cold custard into an ice cream maker and freeze according to the manufacturer's instructions. Let the ice cream soften slightly before serving.



Rhubarb Dream Dessert Recipe

--CRUST:--

2 c. flour
10 tbsp. powdered sugar
1 c. soft margarine

Blend together and press crust into an ungreased 15 x 22 inch pan. Bake for 10 minutes at 350 degrees. --TOPPING:--

4 eggs, unbeaten
2 c. sugar
1/2 c. flour
1 tsp. salt
5 c. rhubarb, finely chopped

Mix together eggs, sugar, flour and salt. Then add rhubarb. Spoon into crust. Bake for 35 minutes at 350 degrees.
